Bake lactofree cupcakes with this Lactofree Strawberry Delight Cupcake Recipe

Lactose intolerant? Now you can have your cake and eat it with this Strawberry & Vanilla Lactofree Cupcake recipe from Lola’s Cupcakes

In March Lactofree, the UK’s only lactose-free* dairy range and Lola’s Cupcakes teamed up to create the Lactofree Stralactofree cupcake recipewberry Delight Cupcake.

Now the recipe has been unveiled for anyone to create their own lactofree cupcakes at home – which means there is no exuse for the estimated 15% of the population who are lactose intolerant to miss out on the cupcake craze.

The Lactofree Strawberry Delight cupcake delights the taste buds with a strawberry and vanilla sponge base, a whip of strawberry butter cream and a juicy, fresh strawberry on top. It may leave lips smacking but they’ll be no uncomfortable side effects as all the ingredients are lactose-free!

Lactofree spreadable is a blend of lactose-free butter and vegetable oil, to allow for easy spreading and versatility in the kitchen – including making these delicious cupcakes.

Lactofree Vanilla cupcake with Strawberry Icing

Lactofree Spreadable     150g

Sugar                                     250g

Eggs                                       2

Vanilla                                   2 tsp

Flour                                      250g

Salt                                         Pinch

Baking powder                  1 ½ tsplactofree cupcake vanilla recipe

Lactofree whole milk      275 ml

 

Method

Mix the butter, sugar and vanilla together until creamed.

Add eggs one at a time.

Sift the flour, salt and baking powder together.

On slow speed mix dry ingredients with butter mixer and slowly add the milk. Keep mixing on slow until all ingredients are combined.

Spoon into cupcake holder.

Bake at 340 for 15-20 minutes.

 

Lactofree Strawberry Icing

Lactofree Spreadable        250g

Icing sugar                    750g

Vanilla                          1tsp

Lactofree whole milk      ¼ cup

Lactofree strawberry yogurt 50g

Crushed fresh Strawberries 35g

A dash of pink colouring (optional)

Fresh strawberry for garnish

Method

Cream butter, vanilla, yogurt and crushed fresh strawberries together.

Mix in the icing sugar and milk.

Whip until fluffy and add a dash of pink colouring (optional)

Spoon into piping bag and pipe onto top of your cooled cupcake.

Add a strawberry on top to finish.

SAY YES to a delicious strawberry cupcake!
Lactofree spreadable is available from Tesco, Asda and Sainsbury’s stores at an RRP of £1.60 for a 250g tub.  The Lactofree range also includes; whole and semi-skimmed (fresh and UHT), hard and soft cheese, fruit yogurts, handy 20ml UHT portion packs and cream.
